Ingredients 12

  • Chicken feet 鸡爪750 g
  • Sichuan peppercorns 花椒to taste
  • Star anise
  • Cinnamon stick
  • Bay leaves
  • Rock sugar 冰糖10 g
  • Shaoxing cooking wine 料酒1 tbsp
  • Dark soy sauce 老抽3 tbsp
  • Light soy sauce 生抽2 tbsp
  • Thirteen-spice powder 十三香½ tsp
  • Ginger 姜2 slice
  • Water 水to taste

Steps 5

  1. Step 1

Rinse the chicken feet and clip off the nails.

  2. Step 2

Put them in a pot half full of cold water, bring to the boil uncovered and boil for 3 more minutes. Rinse under running water and drain.

  3. Step 3

Put the feet back in the pot with water to just cover and bring to the boil. Add the cooking wine, ginger, dark soy sauce and light soy sauce.

  4. Step 4

Put the Sichuan peppercorns, star anise, cinnamon and bay leaves in a tea bag if you have one, and add them. Add the rock sugar and ½ tsp thirteen-spice powder.

  5. Step 5

When it boils again, simmer on low heat for about 80 minutes, until the feet are soft. Boil on high heat at the end to thicken the sauce.
